This fresh and simple Greek dip is perfect to serve with toasted pitta bread for a party platter or with a slowly roasted lamb.

Ingredients

  • 300 g strained yogurt
  • 1 cucumber
  • 1/2 clove of garlic
  • 3 tablespoons white wine vinegar
  • 1/4 bunch dill, finely chopped (optional)
  • 2 tablespoons Santorini Olive oil
  • 1 pinch salt
  • pepper

Method

Coarsely grate the cucumber, sprinkle with a pinch of salt and squeeze out all the liquid. Tip into a bowl with the yogurt, garlic and dill, and mix well. Great served with slow roast lamb or as a dip.
